Milk was collected from cows. The cream was used to make butter and the rest of the milk used to make cheese.

Cattle were first domesticated in Britain about 6,000 years ago. The convertion of milk into butter and cheese is a form of preserving a valuable source of food. Quite when this was discovered is not known.

Milk production increased by 100% between about 1938 and 1986 while the number of dairy cattle increased by 133% during the 20th century.
